Healthy Tex Mex Tostadas
You guys, these were so delicious and healthy I had to share them! If you know me then you also know that tacos have a special place in my heart and Tostadas are pretty much a taco in crunchy form so of course I love them too! The amount in this recipe is 2 servings so you can share or save some for later or eat it all if you really want to! Tostadas: •4 corn tortillas( I always make extra since I have a big pan) •1/2 Tbs olive oil •Preheat oven to 400 •brush both sides of the tortillas with olive oil and sprinkle a little sea salt. •bake for about 4-5 min each side depending on the crispness you'd like Macros for 2: pro:2 fat:3.5 carb:20 Calories:120 Topping mix: •1/3 cup diced bell peppers( I used mix of red and yellow) •1/2 sweet potato baked(I did in microwave)and cut into small cubes •3 oz cooked chicken breast cut into cubes( I used my left over rotisserie) •1/3 cup black beans •1/2 avocado cut into small cubes •1 tomato cute into small cubes •pour 1 tsp olive oil into a skillet over medium heat. •put the bell peppers in and sauté for about 2 min •then add the chicken, black beans and sweet potato to the skillet and cook for another 2 min stirring around occasionally. •then add the tomatoes and avocado to the mix and season to taste( about 1/2 tsp each) with garlic powder, chili powder and cumin •scoop 1/4 of the mixture on each Tostada and top each with 1/2 Tbs of sour cream •you can sprinkle some feta cheese and cilantro if you'd like as well! Oh and a squeeze of lime!
