Now that summer has ended and taken away all of it's delicious seasonal fruits (when I say fruits, I mean just Watermelon because it's my life in the summer), Its time for apples to take the stage! I really love apples because they are so versatile and go with both sweet and savory flavors. my all-time favorite apples are Pink Ladies because of that perfect balance of sweet and tart in each bite and the crisp texture that tops it all off. Ok, now I want one!

I thought now would be the perfect time to show you guys a little compilation of my favorite simple and healthy recipes that all involve apples and are all really delicious!

Delicious Low Calorie Apple Crisp

This crisp was adapted from a recipe by Alyssa_doersken on Intagram. I think this is the recipe I'm most excited about sharing! I have been wanting to make some kind of healthy crisp or cobbler using the Kodiak pancake mix for a while and this was better than I hoped for! I spent a week perfecting it and had a lot of taste testers, including my hubbs who doesn't always enjoy my healthy foods, and they all loved it! It's so healthy you can eat it for breakfast or eat it with a scoop of Halo Top Ice cream for dessert! The recipe can be 1 or 2 servings depending on if you want it for your meal or a little treat, but it's pretty filling! you can also triple this recipe and put it in an 8x8 pan for the family!

Apple Filling Ingredients:

-1 medium to large apple sliced thinly (pictured below)-My favorites are Pink lady or Honeycrisp, but you can use your favorite!

-1/8 tsp cinnamon

-1 tsp truvia (you can sub with your favorite natural sweetener)

Topping Ingredients:

-1/4 cup Kodiak protein packed pancake mix

-1/4 cup quick oats

-1/2 tsp truvia

-dash of cinnamon

-dash of salt

-2 tsp melted butter (or sub coconut oil)

Directions:

-Heat oven to 350 degrees

-Mix all Topping ingredients in bowl with a fork, making sure butter is evenly mixed with dry ingredients

-Cut apples into 1/8 and then slice (I used apple slicer)

-Mix Filling ingredients in a separate bowl with spoon until Apples evenly coated

-Put Filling mix into 2 oven safe ramekins or 1 small oven safe dish (muffin tins, small bread tins etc..)

-Distribute topping evenly over apples

-Cook in the oven for 20-25 min (25 will make apples softer so depending on the the softness you like. )

-Enjoy just like this or add a Tbs of whipped cream, a scoop of ice cream or pour a little milk on top!

Chicken Salad on Apple Slices

This is one of my favorite go to meals! It is packed with protein and the chicken and apples go so well together! You can add other fruits, nuts or veggies to the salad if you'd like, but I will give you the basic recipe below!

Chicken Salad Ingredients:

-3 oz of Canned chicken or shredded chicken

-1 Tbs of light mayo, veganaise, or even cottage cheese (I have been using veganaise and really like it.)

-A little salt and pepper to taste

-Mix the ingredients together and add any other fixings you'd like! that's it! Use a fork to scoop on the sliced apples.

White Chocolate Fruit Dip

This recipe has been a long time favorite and it was adapted from a Cheesecake dip by Chocolate Covered Katie! It is really delicious and uses greek Yogurt for a high protein snack! As you can see, It goes well with a lot of things besides apples!

Ingredients:

-1/2 cup Nonfat Greek Yogurt

-1 packet of truvia

-1/4 tsp vanilla

-1 Tbs White Chocolate Pudding mix (you can use regular or sugar free. I use regular because the sweetener in the sugar free doesn't agree with my stomach)

Directions:

whisk all together in a bowl and dip away!

Apple Sandwiches

These don't really even need a recipe, but they are fabulous little snacks! I have tried them with cheddar cheese and Mozzarella and they are both great! here's just a quick list of what's on them! The nutrition will depend on what cheese you use.

Ingredients:

-Sliced apple

-Sliced turkey

-Slices of cheese

-Spinach

-I've also added a little cranberry sauce on them and it was really good!

Directions:

Now just put a little bit of everything between two slices of apple! really obvious , but there you go!

Apple Slices with a Peanut butter and Honey Drizzle

Apples and Peanut Butter always go well together! This peanut butter drizzle is made with Peanut Butter powder to keep the calories lower, but don't worry it still tastes Amazing! I sprinkled a little Coconut on it for fun this time as well! A little dark chocolate drizzled on there would be super delicious if you want to make it more of a dessert!

Ingredients:

-2 Tbs Peanut butter Powder (I used PBfit. You can find by peanut butter)

-2 Tbs light milk

-1 tsp honey

Directions:

Whisk all ingredients together and drizzle over apple. Told you these were Simple recipes!!
