I just wanted to share this delicious Soup Recipe from Chew Out Loud. It Is still pretty light as the original recipe, but I changed just a few things to bring the calories down a little. My husband fell in love with all things curry when he was in Canada for a few years and now he's passed that down to me as well. We love asian style Curry as well as Indian Curry. If you are ever in Salt Lake City, you need to go try "Curry In a Hurry"! It's this tiny little place that we happened upon, but now we go there whenever we get a chance!
This soup will go on our list of recipes to rotate through because it had such a nice curry flavor with a hint of sweetness that was so comforting. I'm also really loving Rice noodles lately! They are healthy and a fun switch up from regular noodles.
The Only changes I made were:
-Light canned coconut instead of regular
-Used 1 1/2 Tbs of sugar instead of 2 Tbs( you could probably do less and it would still be tasty)
-I used canned chicken just out of laziness, but i love it in there because it breaks up into really small pieces.
-I also used the regular stir fry rice noodles instead of the wide because they didn't have them at the store.
